*Tristan’s 2nd Birthday Party*

Here are the few pics I got of Tristan’s “Fun In The Sun” birthday party! It was so much less stress than last year (which was crammed full of the “1st baby, 1st birthday” stress and unreasonable expectations). We did it family style, so everyone just got together and ate and watched the kids play in the water. I (once again) didn’t give myself enough time to get the decorations up before people started showing up, so it wasn’t as pretty as I wanted it to be (I didn’t even end up putting up the “HAPPY BIRTHDAY TRISTAN” banner that I made…. and it was CUTE!). But nevertheless, here it is:

All Tristan did the whole time was play with that elephant!


The letters on the cake were a little bit disasterous because I was writing them on as I was walking it out to sing happy birthday (once again, didn’t give myself enough time) but the turtles were so much fun! It was my first time using fondant and I’m so in love with it! I got the idea from Stephanie’s Sweet Creations and the Cake Journal =)

Hot Tamales!

Finally! A post! And not just any post, I finally remembered to take pictures last time I was making a batch of tamales, so here it is! These have got to be one of my favorite things to make, mainly because you can make A LOT of them at once, freeze them, pop them in the microwave for a few minutes and they are so delicious!!

Here’s what I use:

Tamale Dough (see recipe below)
Can of Tamale Sauce
Rotisserre Chicken
Bag of Corn Husks

(I usually can get everything that I need for these at Lin’s.)

First I take the corn husks and start soaking them in warm-hot water in a cake pan or large bowl in the sink. Once they are soft take them out and towel dry them off. while I’m drying them off I keep an eye out for any husks that are longer than the rest and set those aside to rip into small strips for holding the tamales together later.

While the husks are soaking I shred the chicken and mix it with the can of tamale sauce.  In this particular batch I tried mixing an additional can of tamale sauce with vegetables (zucchini, summer squash, onions and peppers – all from my sister’s garden! YUM!) to fit into my veggie diet and they turned out amazing =) Then I put my sauce mixtures on the stove to simmer for a few minutes while I make the tamale dough.

Here’s the tamale dough recipe I use:

3 cups Maseca for Tamales
3 cups Chicken Broth
1/2 cup Vegetable Oil
1 teaspoon Salt
1/2 teaspoon Baking Powder

Mix dough ingredients together and your ready to start assembling the tamales like this:

Then I start stacking them into a pan with a steamer on the bottom until it’s full and ready to cook!

You know they are done when you can pull the husk off the dough and it doesn’t stick. Once they’re done cooking (it usually takes about 40-50 minutes of steaming time) let them cool for at least 10 minutes as to set completely.

Birthday Party Invites!

Here’s a little summary of how I threw together my son’s birthday party invites =)

First I started out with these old thank you cards that I found for sale a few years ago.

These are the scrap papers that I used from my stash of baby boy papers.

I choose which paper I wanted to use for the front and cut them to the correct size and glued them onto the face of the card. Then I ran each piece across my black ink pad to help it pop a little.

Next I cut out smaller pieces to accent the face and highlighted the edges with a turquoise ink pad.

I glued each small accent piece onto the face and tilted them a little.

Next I printed out a sheet of “Fun in the Sun” labels to add onto the accent. I couldn’t decide on just one font so I just all the ones I though were cute =)

Here they are all pieced together!

Next I printed out the invitation for the inside and cut it to fit.

I used these from my scrapbook stash to hold the invite inside.

And there you have it!

My current mommy related question has been worrisome for me lately… How much TV is too much for my 2 year old son? He’s my first and only and has been stuck at home all day with me lately, which results in approx 3 hours of TV per day (on a bad day, when he gets so fussy being home that I resort to sticking him in front of the TV). They are all good shows, Baby Einstein, Blues Clues, Baby Signing Time and his favorite Curious George (the movie) and he’ll play with his toys and things through most of them. But when a day passes that I realize he’s watched so much I feel like throwing all our media away (including the computer, because if I weren’t so busy trying to do work on it I could play more with him)!!! But of course that’s crazy talk, we need the money I get from my computer work, there’s no possible way I could spend every minute of the day on the floor playing with him (even he would hate that) and what would I do once he was asleep?!?!

Any words of wisdom on the subject? =S

Stuffed Mushrooms =P

I got another amazing recipe from my sister-in-law using her home grown Swiss chard, and here’s how it turned out!

Like most always, I made changes to the recipe based on what I had and how I was feeling, lol. Here’s the original recipe though:

Mushrooms Stuffed with Rice and Greens

2 teaspoons extra-virgin olive oil
1 small white onion, chopped
4 cups sliced escarole or Swiss chard
2 large cloves garlic, minced
1 cup brown rice, cooked according to package directions
½ cup chopped roasted red bell peppers
4 large portobello mushrooms, stems discarded
½ cup prepared hummus, preferably basil flavored
3 Roma tomatoes, sliced
¼ cup chopped walnuts
¼ cup grated Parmesan cheese

Preheat the oven to 400°F.

Heat the oil in a medium skillet over medium-low heat. Add the onion and cook, stirring occasionally, for 5 minutes, or until softened. Add the escarole and garlic. Cook, stirring occasionally, for 5 minutes, or until wilted. Remove from the heat and stir in the rice and peppers.

Place the mushrooms, gill side up, on a rimmed baking sheet. Spread with the hummus and spoon the rice mixture over the top, spreading it to the edges. Arrange the tomato slices on top and sprinkle with the walnuts and Parmesan.

Bake for 25 to 30 minutes, until the mushrooms are tender. Let stand for 10 minutes before serving.

I used regular (large size) mushrooms, instead of portobello. I couldn’t find basil hummus so is used a spinach flavor that i found. Also, once I got started I realized that I was going to have WAY too much filling, so I didn’t use the rice and i wish I would’ve remembered to get the walnuts because it would have added a great touch.

And BTW, I have a few upcoming projects that are rounding into the finish line soon. One is my son’s nursery, his second birthday party (this Saturday) and a set of wall art for my master =)

My Anti-Journal Journaling =P

So ever since I started this blog (a whole whopping 6 weeks ago) I’ve been very careful not to turn it into a journal. I wanted the overall essence of this blog to be inspiring and something that I {love} keeping up on, and I’ve kinda felt that the only way to maintain that is not to get too personal… besides, I’m very blessed with plenty of family and friends shoulders to go cry on, why infect my new inspirational-to-go-spot with my negative emotions when there are plenty of other constructive places to spew them at, right?

But as I’ve been sitting here this afternoon, soaking in this GORGEOUS cloudy weather (can’t ever get enough of cloudiness in the Arizona desert) without a finished project to post, I’ve been feeling the need to mini-rant about my son’s recent boo-boo =’( Yesterday morning after we were done making scrambled eggs he put his hand on the hot burner and burned half of his left palm! Instantly my mothering skills kicked in and withing 1.5 seconds I was holding him up at the sink with his hand running under water while my free arm was thrashing through my medicine cabinet pulling out lavender oil, band aids, gauze, burn ointment, medical tape, childs Motrin etc. {All the while, of course, my heart was breaking into a thousand pieces and my body was wanting to curl up in the fetal position and rock back and forth crying for him}. After spending an hour helping him deal with the pain and trying several wraps (all of which he ripped off instantly) he finally settled down. I spent the rest of the day trying to get a grip on the idea that he had blisters all over one hand and he kept using it like nothing happened!

At times being a mother feels like a sick joke on humanity… how is it that any we can go through the misery of watching our child suffer such pain and come out the other end a sane person?

Mmm Mmm Cinnamon Buns!

I decided to take a whack at making cinnamon buns the other night and they turned out quite delicious! The only thing I would do different next time is make them at night and cook them the next morning (one of the recipe options), I think. I was so excited to eat them that I didn’t wait long enough for them to rise =P But nevertheless, here they are:

Cinnamon Rolls I

Ingredients

  • 1 (.25 ounce) package active dry yeast
  • 3/4 cup warm water (110 degrees F/45 degrees C)
  • 1/4 cup white sugar
  • 3/4 teaspoon salt
  • 1 egg, room temperature
  • 2 1/2 cups bread flour
  • 1/4 cup butter, softened
  • 1 tablespoon ground cinnamon
  • 1/2 cup brown sugar

Directions

  1. In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  2. In a large bowl, combine the yeast mixture with the sugar, salt, egg and 1 cup flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well with each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Cover with a damp cloth and let rest for 10 minutes.
  3. Lightly grease an 8×8 inch square baking pan. Roll dough out on a lightly floured surface to 1/4 inch thick rectangle. Smear the dough with butter and sprinkle with cinnamon and brown sugar. Roll up the dough along the long edge until it forms a roll. Slice the roll into 16 equal size pieces and place them in the pan with the cut side up.
  4. Cover pan with plastic wrap and refrigerate overnight or cover and let rise at room temperature until doubled in volume, about 45 minutes.
  5. Preheat oven to 400 degrees F (200 degrees C). Bake rolls until golden brown, about 20 minutes.
